Stag Hollow Wines

Our grapes are carefully harvested by revisiting the vines during harvest to choose only the ripe clusters. The wine is then slowly fermented in small lots, with whole berries added in (up to 10 percent). We use French oak barrels from three different forests to add complexity. Our pinot noirs are unfined and unfiltered and display complex, ripe berry and black cherry flavors, often with youthful tannins, spice, oak, and a long finish. We attribute these characteristics to our micro-climate and soil, vineyard practices to accommodate dense vine spacing, and our vinification techniques.
